Balancing history with genuine fun for kids is hard but this itinerary managed it across the three nights. Dolmabahce Palace tour ran a bit long for our younger one who got restless towards the end, but overall the pacing worked well. Bosphorus cruise was everyone's favourite part, no complaints there at all.
Traffic between sites was brutal during our visit, one transfer alone took over an hour which is rough with tired kids in the car, though Bosphorus cruise and Hagia Sophia were definitely the highlights.

Hagia Sophia's dome left our kids craning their necks upward for a good five minutes straight, you could see them genuinely trying to process the scale of it. Dolmabahce Palace afterward felt like walking through a history lesson none of us will forget, our daughter especially loved imagining the sultans living there. Bosphorus cruise in the evening was the calm, scenic wind down we needed after two packed days of sightseeing.
